Recipe : Vegetable ragout with mushrooms


  
Vegetable ragout with mushrooms.

 Ingredients:


* 200g fresh mushrooms (e.g. champignons)
* 4 tomatoes
* 1 sweet pepper
* 1 eggplant
* 1 zucchini 
* 1 onion
* 2 cloves of garlic
* 2 sprigs of parsley
* 30g olive oil
* 1/2 of a lemon, juiced
* freshly ground black pepper
* salt

    Method:


  1. Slice the mushrooms, sprinkle with lemon juice, stir and sauté in a skillet for 7 minutes.
  2. Chop the tomatoes into cubes, mince the garlic cloves and cut the sweet pepper into strips.
  3. Wash and dry the zucchini, then cut into round slices. Peel the onion and slice it into rings.
  4. Cut the eggplant into small cubes, put in a bowl, sprinkle with salt and leave for for 15 minutes.
  5. In a sauté pan heat the olive oil, add onion and garlic and sauté for 3 minutes.
  6. Rinse the eggplant cubes with water, squeeze out the excess water and add to the pan of onions together with zucchini, sweet peppers and sautéed mushrooms. Cook for 5 minutes. Add the chopped tomatoes and let cook for 7 more minutes.    Season with salt and pepper.

 For serving garnish with parsley.
