Russian cabbage cutlets.
Ingredients:
* 400 g finely chopped fresh cabbage
* 3 tablespoons butter
* 3 slices of white bread
* 1/2 cup cream
* 4 eggs
* 1/2 cup sour cream
* 1 tablespoon flour
* 1/2 cup bread crumbs
* salt
* green herbs for garnish
Method:
Cover the chopped cabbage with boiling hot salted
water and leave to soak for 15 minutes, then drain and braise with 1/2 cup of
water and a bit of butter for 50-60 minutes untl tender.
Soak the bread in cream, and drain well. Add the bread
to the braised cabbage together with butter, sour cream, 3 raw eggs and flour.
Season with salt and give a good stir to combine evenly.
Now use this cabbage mix to make oval cutlets or
patties, dip each cutlet in whisked egg and roll in breadcrumbs. Fry on a
frying pan with butter from the both sides.
Cabbage cutlets are best served with boiled potatoes,
eggs, sour cream sauce and sprinkled with fresh green herbs.
As a variation of this recipe you can also use
cauliflower or sauerkraut instead of the fresh cabbage. If you decide in favour
of cauliflower then garnishing with mushroom ragout and sour cream will give
the most delicious flavour combination.
